Food & Beverage Commercial Manager
F&B is a core revenue stream across ATG's venue estate, traded in short, high intensity windows and across formats ranging from listed theatres to modern arenas. This role holds category ownership across F&B, from supplier relationships and negotiations to the analysis that drives range, pricing, and promotional decisions, to executing our Concept strategy across Lounges, Priority Bars and Delivered at Seat. You will be the commercial engine of a small team. We are looking for someone who is passionate about the customer proposition, not just the margin.
Supplier negotiations and trading
- Support and lead supplier negotiations, including annual price reviews, cost price increase challenges, promotional and marketing funding, and the listing and delisting of products.
- Own day to day relationships across an allocated supplier portfolio.
- Run monthly and quarterly business reviews end to end - agenda, performance pack, actions closed and followed up.
- Bring product and format innovation from suppliers to test, challenging how we could do things differently.
- Maintain the supplier terms and contract record, flagging renewals and expiries ahead of time.
Commercial income and rebates
- Own rebate and supplier income tracking end to end, from contracted entitlement through to cash received.
- Work with Head of Commercial to identify marketing and rebate opportunities in venue and online to take to suppliers in support of bottom-line growth.
Range and category strategy
- Drive and support the range review process, analysing performance by category, product, venue, and trading session, and turning it into clear recommendations.
- Benchmark our proposition against comparable venue, hospitality, and retail operators.
- Lead seasonal range reviews, from category planning through to execution with venue teams.
- Work with F&B Operations Manager to deliver range changes.
Pricing and promotional execution
- Execute pricing framework across venues
- Review EPOS promotion and price change requests from venues, test the commerciality of the proposed change, and approve, amend, or reject with a clear rationale.
- Evaluate promotions and supplier funded activity against pre-agreed success criteria and feed the learning into the next cycle.
- Maintain the pricing master file, including cost prices, selling prices, product hierarchy.
Concepts and commercial projects
- Support concepts strategy across Lounges, Delivered at Seat and Priority Club Bars.
- Lead defined commercial projects, trialling new ideas with clear baselines, control venues, and success criteria before estate rollout.
Supplier onboarding and compliance
- Manage supplier onboarding end to end, acting as intermediary between suppliers, Finance and Operations.
- Complete hygiene, food safety, accreditation, and eligibility checks, and maintain the due diligence record.
- Manage supplier set up process - including tagging product for reporting system and allergens.
- Work with F&B Operations Manager to resolve the practical implications of new supply before going live - minimum order quantities, storage, delivery frequency, and distribution route.
Essential skills
- Category management, buying, commercial or trading experience, ideally grocery, convenience, wholesale, or hospitality.
- A negotiation track record you can evidence - what you ran, how you prepared, what it delivered.
- Strong commercial numeracy
- Ability to interrogate incomplete data and reach a defensible, well-reasoned answer.
- Experience owning supplier relationships in your own right, including difficult conversations.
- Analysis turned into short, clear recommendations a senior stakeholder can act on.
- Accuracy and discipline with commercial data, price files, and records.
- Ability to run a project to a deadline across teams you do not manage.
Desirable skills
- F&B experience in retail, hospitality, leisure, travel, or venues.
- Multi-site experience across varied formats and footfall.
- EPOS or sales reporting systems, and BI tools such as Power BI or Tableau.
